Well, I did it!! I made a DELICIOUS raw, dairy free blueberry cheesecake!

NO, this is not WPP. This was made as a Fathers Day treat! Way better than many desserts!
I added only about 1/4 cup (at most) raw honey for sweetener. I also used all raw nuts. Crust I used half walnut half pecan (instead of walnut/almond in recipe)
I also recommend NOT soaking your cashews overnight, it is too long. You only need to soak them for 1-4 hrs.
We also only placed in the freezer for 3 hrs and then ate, it was not frozen hard at that point. By the next day, if left in the freezer, yes you will need to thaw a bit before cutting.
I am already thinking of ways to improve this gem, like maybe some ginger...?

PANCAKE FISH, yep, I made paleo pancake cod nuggets and they were awesome! I bought a paleo pancake mix a long time ago and tonight wanted to eat cod and thought, hey why not! The mix is from Birch Benders Micro-Pancakery and is gluten free, grain free and soy free. I cut some cod fillets into nuggets, whipped an egg and stirred in with fish. Next added some of the mix until coated. Cooked over med heat in Tin Star Foods ghee just until browned on both sides and sprinkled with salt and pepper.
Served with romaine salad - I made a quick dressing with FarmhouseCulture gut shot, olive oil, mustard, s &p
Roasted cauliflower with lemon, nutritional yeast, s&p, red chili flakes
