About The Beer Release: Calypso is a 2-row winter barley variety that was grown right here on the farm by our friend Dan Brann. Murphy & Rude Malting Co. (Charlottesville) then custom malted a small batch of Dan's Calypso barley to create an English-style pale ale malt with subtle bread/cracker flavor. With this malted barley, our brewmaster then brewed a ~3bbl pilot batch of Calypso beer. We kept the beer recipe very simple to showcase the flavor of the Calypso barley without distractions from other malts, hops, or yeast. This Calypso brew is proof positive that with an experienced & dedicated team (grower, maltster, and brewer), high-quality malting barley is viable in our region.
After nearly 11 years @thisisicf , today I pulled chocks and said my final goodbyes to some of the greatest friends and colleagues a schmuck like me could ever ask for. Companies like this don’t come around very often and if my own is half as successful I’ll consider it a job well done. Now, time to put final touches on this malt house and get to work! #makegreatthingshappen
This just in. 10,000 cfm of malt kilning badness (in a 3rd-in-the-NFC-North wrapper?). This 1200lbs of twisted steel and sex appeal will ensure we complete an efficient initial free dry in this humid rain forest we call #virginia and maintain proper pressure in the kiln before we ramp up temps to the color/flavor zone on our way to recirculation and 4% final moisture specs.
