Even though I’m not currently on Whole30, I’m inspired by everyone’s posts so I made this recipe from my blog - Whole30 Spaghetti Squash Pad Thai. I’ve been craving Pad Thai for a while and I’m so glad that I made this recipe instead of caving and ordering in. This is INCREDIBLY flavorful and is made with simple ingredients that you probably already have on hand! I didn’t make it into boats like in the recipe and just whisked the eggs into the Pad Thai, which was easier and still just as tasty. Seriously, whether you’re on Whole30 or not, you MUST make this! I’ve had to come to @bluestonelanecoffee twice in a row just for this beauty - I swear they have the BEST avocado toast!! Thick cut bread with a seriously generous avocado layer that’s drizzled with olive oil and lemon juice and sprinkled with red pepper flakes and sea salt. Plus, added a poached egg over the top to make it the perfect breakfast ever. -
Today finally feels like the first day of the new year to me since my family who was visiting just left yesterday. While it’s a bummer to be out of vacation mode, I’m glad to be embarking upon a new year with new beginnings. I hope your new year is off to a great start so far!
Holiday travels are meant for indulging, right?! Bc that is seriously all we’ve done for the last week and I don’t feel one bit guilty about it. Loved visiting this new neighborhood in Seoul (#익선동 ), which revived many abandoned traditional-style homes into adorable cafes and shops. We stopped by ELLIE cafe for a matcha latte (for me), beer flight (for hubs), and truffle fries (for yumz). I think we burned it off walking in the freezing cold though, so it’s cool.
Today’s “light” breakfast in Hong Kong consisted of 6 different steamed buns, a dozen dumplings, and 2 egg tarts. Seriously stretching the limits of how much food my body can hold on this trip! This steamed bun was a custard bun with a fluffy, very lightly sweet filling. So good!
Still dreaming of these incredible pancakes from @ventanabigsur yesterday. Whole grain pancakes with sautéed apples and toasted walnuts 👌🏼. Serious perfection. I usually wouldn’t order pancakes for breakfast, but hey, it was my birthday and this was what I was craving so I went for it. With 2 eggs on the side for protein #balance . This totally hit the spot and now I’m wishing I could have this every single morning!
I was having major toast envy at @bluestonelanecoffee this morning while picking up my golden turmeric latte so had to come home and whip this baby up. And I’m so glad I did because this was one of the best breakfasts I’ve had in a while! My FAVE gluten free sourdough from @breadsrsly topped with half an avocado, a fried pasture raised egg, truffle whitefish caviar (I know, so fancy, but so delicious), red pepper flakes, and flakey Maldon sea salt. I could probably eat this every single day for breakfast forever.
My super-extra breakfast sandwich bc why not? Homemade challah bread rolls topped with a fried pasture raised egg, quarter of an avocado, and truffle white fish caviar. I know, caviar for breakfast?! Who am I?! But, it is such a great source of protein, omega-3, and B vitamins - like they’re little balls of concentrated nutrients. Plus, it tastes absolutely delicious. I’m planning to do a little baking this weekend and might just have to whip up this incredible pumpkin roll cake!! It’s been a while since I’ve made a roll cake, although it is my favorite type of cake - you just get that perfect distribution of cake:frosting, ya know? This plate is full of all my favorite things: roasted sweet potatoes, baked falafels, kale salad, and a fried pasture raised egg. Simple, yet super filling and delicious! Obsessed with this combo lately- @siggisdairy pumpkin spice yogurt mixed with extra pumpkin for fiber, bee pollen, figs, and granola. Drizzled over with a bit of raw honey for good measure. Simple and gets the job done!
Next level paleo banana bread 👌🏼👀! Made an AMAZING paleo banana bread earlier this week that’s super low in sugar. Toasted the last few slices this morning and topped with peanut butter, cacao nibs, and @thecoconutcult yogurt. Dessert for breakfast is where it’s at 👍🏻!
Easiest meal ever thanks to @traderjoes! Made a bowl with their harvest grain salad (which is SUPER filling) plus @vitalfarms pasture raised egg on top. Topped with everything bagel seasoning and some truffle zest from @sabatinotruffles to fancy it up. Perfect Monday meal when you cannot be bothered to cook 👊🏻👍🏻✌🏻!
Paleo Collagen Banana Bread Waffles for breakfast this morning! These were ridiculously good - so crispy on the outside and deliciously chewy on the inside. To make these I️ used my favorite @brittany_angell paleo waffle recipe and replaced the oil for a mashed banana and added in a scoop of @furtherfood collagen. Then topped with toasted chopped pecans, cacao nibs, peanut butter, and maple syrup. Now off to have a productive Sunday (mainly because I️ can’t sit down since I️ pulled my back muscles 😭 and I️ am the worst at resting)! Hope you have an awesome day!!
Breakfast made by my sister @seulki_chung ❤️! Fiber bread topped with @kitehillfoods cream cheese, avocado, and @vitalfarms pasture raised egg. Sprinkled over with everything bagel seasoning 🔥💯! But serious question, why don’t my @vitalfarms egg yolks in CA look as orange 🤔???
The absolute perfect dinner plate 🙌🏻💯! Shredded kale salad massaged with olive oil, lemon juice, and truffle balsamic plus golden raisins (soaked in hot water first to get them juicy), Parmesan, and roasted walnuts. King salmon from @wholefoodssanfrancisco cooked in loads of @fourthandheart ghee, salt, and pepper on the cast iron to get that perfect crispy skin. Side of roasted rainbow carrot fries. It’s balanced, healthy, and crazy delicious! Hope you had a wonderful Monday!!
LOVED our dinner last night at @kitavakitchen soft opening! So excited that San Francisco finally has a paleo restaurant (seriously about time). I love that I can walk into this place and feel good about ordering ANYTHING off the menu 🙌🏻 (and pro tip, get the butternut squash hummus with yuca root chips omg). They open next week (11/2) so be sure to go check it out!
Obsessed with these baked mushroom fries... although they taste more like mushroom-y chicken tenders? Seriously, I need to write down the recipe for these because they are RIDICULOUS! They’re king trumpet mushrooms coated in a blend of flax seeds, nutritional yeast, Parmesan, dried onions, everything bagel seasoning, paprika, and garlic. Baked in the oven at 425 for maybe 30 mins. They turn it SO crispy and meaty! So so obsessed.
