Back at it with the butternut squash ✌🏼made a big batch of roasted butternut squash slices to go with my dinner a few nights ago so had some leftover to toss in my lunch πŸ₯— with some chicken, peppers, baby spinach, cherry tomatoes and some feta cheese

Simple & delicious lunch of roasted aubergine, chicken & sun dried tomatoes πŸ†πŸ…πŸ₯—

Perfect dinner for chilly autumn evenings of roasted stuffed butternut squash πŸ€— stuffed with chorizo, sun dried tomatoes, cherry tomatoes, feta and red onion!

Recipe:
πŸ’› Cut butternut squash in half and deseed, drizzle with olive oil & sprinkle with a bit of salt & pepper πŸ’› Roast butternut squash in oven at 200C for 40mins or until skin and flesh is soft πŸ’› In a frying pan, fry sliced red onions in olive oil on a low/medium heat for about 5mins until softened πŸ’› Turn up the heat a bit and fry of chucks of chorizo πŸ’› Add tomatoes and a splash of balsamic vinegar, fry for 2 more minutes then turn off the heat πŸ’› When the butternut is done, scoop the chorizo tomato mixture into the hollowed but of the butternut & sprinkle with cubes of feta πŸ’› Done and ready to eat! .
