All the autumnal colours 🍂🍁🍂tried to make the most of the dry (but cold) weather this weekend and enjoyed lunch outside in a park, I wish I could do this more often, it's so nice to get some fresh air and really just clear your head while eating some warm food 🤗
Back at it with the butternut squash ✌🏼made a big batch of roasted butternut squash slices to go with my dinner a few nights ago so had some leftover to toss in my lunch 🥗 with some chicken, peppers, baby spinach, cherry tomatoes and some feta cheese
One thing you need to know about me is I LOVE my pancakes and I usually make them at least once a week! I try lots of different toppings but this week's toppings are berries, dark chocolate and a drizzle of honey 🥞🍯😋
Perfect dinner for chilly autumn evenings of roasted stuffed butternut squash 🤗 stuffed with chorizo, sun dried tomatoes, cherry tomatoes, feta and red onion!
💛 Cut butternut squash in half and deseed, drizzle with olive oil & sprinkle with a bit of salt & pepper 💛 Roast butternut squash in oven at 200C for 40mins or until skin and flesh is soft 💛 In a frying pan, fry sliced red onions in olive oil on a low/medium heat for about 5mins until softened 💛 Turn up the heat a bit and fry of chucks of chorizo 💛 Add tomatoes and a splash of balsamic vinegar, fry for 2 more minutes then turn off the heat 💛 When the butternut is done, scoop the chorizo tomato mixture into the hollowed but of the butternut & sprinkle with cubes of feta 💛 Done and ready to eat! .
Butternut squash is such a fantastic source of fibre, potassium and many other key nutrients (especially vitamin A)! It's is currently in season so will be experimenting a bit more with it in more recipes👩🏻🍳
Meal prep Mondays💃🏻 I don't say this often but I'm pretty proud of this dinner... Just exactly what I needed- so warming and so much flavour! Chicken thighs with mustard puy lentils with lots of colourful roasted veg 😋
First ever attempt at making my oats look a little less like a complete mess 😬 perfect for a cold morning - warm Bircher oats cooked in a pan with grated apples, chia seeds, raisins topped with leftover apple slices, seeds and peanut butter 🍎🥜🍯 left me full till it was time for a late lunch!
