Lunch time after a gym workout 💪 Made a mix of veg, topped off with soy sauce marinated tempeh 🙌 I could never get a hold of tempeh back in Austria, so I am very happy to have it back in my life now. Yum!
Lunch time with my boyfriend 👫 Went to one of my favourite cafés in town, but they had changed the menu 😮 Instead of having my usual sourdough bread with hummus and veg, I had to improvise and ordered toast with avocado, tomato, pine nuts, onion, bean sprouts and lettuce. Still very tasty of course, but now that they have less vegan options I was pretty sad 😐 Hopefully that will change sometime in the future again!
Breakfast time back in my Dutch home again 😁 I had prepared these overnight oats the day before, putting 1/2 a cup of oats with 1 cup of almond milk. I also mixed in a banana, some maple syrup, chia seeds, flax seeds and cinnamon. This morning, I cut up a peach that I had lying around and put it on top to finish it off 😄 So quick and easy!
This dessert I had a little while ago on holiday.. I mean what dream this is for a chocoholic 😍 This was a chocolate cake, drenched in chocolate sauce, with a sort of whipped cream. I am always so amazed how easy it is to make well known desserts vegan. You just got to find some alternative ingredients, but other than than it's super simple. I should definitely try and experiment with desserts more often myself 😋
I've reached 500 followers!! 🙌🙌 Thank you all for following me along in my journey this past year and a half, it's been quite a ride 😁 Becoming vegan has brought me a lot. I feel a lot fitter and happy in my own skin (although I need to go to the gym more often 😉) and am happy that I am not supporting any industries I do not believe in. Making this lifestyle change has also encouraged me to cook and experiment more in the kitchen, surprising myself with what amazing dishes I could make if I just put some effort into it. Now, cooking has turned into a big hobby of mine and a point of relaxation at the end of a day of working when I'm craving something tasty 😊 I am curious what the rest of the year will bring but thus far, I wouldn't change anything 😋
Breakfast today was overnight oats. I decided to trade in my regular oatmeal for this, since it is just way too hot outside to have a hot meal to start the day. For this, I used 1/2 a cup of oats with 1 cup of almond milk, topped it with a layer of bananas, blueberries, blackberries and passion fruit 😍 This is definitely my new favourite breakfast and it is so easy to make, as you can prepare it the night before. Perfect if you have to quickly run out of the door!
I tried vegan mozzarella for the first time today, and boy was it a pleasant surprise. The fake cheese was very flavoursome and in my opinion very reminiscent of mozzarella. My mom, who eats regular mozzarella daily for lunch also tried it, agreeing with my opinion 😇 With the mozzarella, I made a caprese salad, with cherry tomatoes, olive oil and some fresh basil 🙌
Another pizza, because Italy 😂 Went to this restaurant that had very good reviews online and offered a 'pizza vegana', so of course I had to try that 🙌 The pizza had a tomato sauce that was very sweet in taste, and was topped with diced carrots, courgette and some other veg. Unlike the typical thin Italian pizza, the crust on this one was on the thicker side. I very much enjoyed this pizza, as it was so different from what I had been eating for days 😁 Paired with a glass of white wine, this is the perfect meal for me!
Main course at the best vegan restaurant 🙌 As I regularly have pizza and pasta in Italy already, I decided to go for something different. Ended up choosing this lemon and ginger risotto, which was super tasty. Little did I know how crunchy the risotto grains still have to be when they are so called 'al dente'. I usually cook them way longer, which now I know is a big mistake 😂 The rice was very rich in flavour, and very filling for the portion you got. I'm definitely going to try and make some more risotto back at home, so that I can hopefully try and have this tasty meal more often 😇
When I meet people who usually don't have a proper meal at breakfast, I'm like 😮 Breakfast is without a doubt my favourite meal of the day, and oatmeal has to be my number one choice in that category 😁 It's so versatile, as you can switch up the flavour daily and keep your taste buds on the edge 🙌 Today I made some cinnamon oatmeal with banana, blueberries, raspberries, red currants, flax seeds and chia seeds 😍 This will fill me up without a doubt until lunch
Sushi for dinner? Yes please 🙌 I made mine with tofu (marinated in soy sauce), carrots and cucumber. I love the combination of the soft tofu with the crunchy veg 😁 Of course these were dipped into plenty of soy sauce, as I might have a slight addiction in that regard 😇 Yum!
Another must do when you're in Italy: drink an aperol spritz 🍹 This has to be one of my favourite drinks, especially in the summer 🌞 Just got to be sure not to have too many of these, as they can be deceivingly strong sometimes 😁
Pizzaaaaaaaaa 😍😍 I love that in Italy they have pizza marinara everywhere. Marinara is just a plain pizza, topped with the freshest tomato sauce, olive oil, garlic, oregano and basil. Pure perfection if you ask me 😋 In Italian restaurants I go back at home, the plainest pizza they have is margarita, which of course without the cheese ain't the same thing 😇 because no one can do it like the Italians 🙌
When in Italy, you can't possibly skip on the gelato 🍦 As a little snack before dinner (yes I know, should be the other way around 😋) I had one scoop of the dark chocolate flavour. And I will tell you, this was legit dark chocolate, tasting like a Lindt 85% cacao chocolate bar, which are my favourite of all time 😍 If I lived around the corner of this place, I'd return daily 🙌
Went to one of the best vegan restaurants I've ever been to 😍 I am not kidding, the food was out of this world. The restaurant offered traditional Italian dishes, as well as a range of vegan burgers and wraps, so that everyone can find something to their tastes. I went for this bruschetta as a starter, which was so full of flavour 🙌 With a good glass of wine, this was the ultimate treat 😋 Main course will follow!
The best decision you can make in a day, is to make pancakes for breakfast 🙌 My sister and I made these banana pancakes for the family, which contained bananas, oats, oat flower, baking powder and almond milk. Mixed together this combination makes the perfect batter to make the tastiest pancakes 😍 I usually top them with peanut butter and maple syrup (if you haven't tried this combo yet you have to) and any fruit that we have lying around the house. In this case that was pineapple and strawberries 👆 Heaven!
