As with many meals my husband makes, this is hard to describe. But I would say... A type of ginger and basil curry with cauliflower rice and vegetables. It was pretty amazing and the only type of carbs I can't turn down are Indian food carbs. And I'm not really even sure how many carbs are in this scrumptious dish.... peas and carrots made it iffy. "Don't let perfection be the enemy of progress". This is my first transformation Tuesday. I've always held off because the "product" is not finished and I have not yet achieved my goals. It hasn't been a perfect journey and while my tendency is to be neurotic , if I can't be I fly off the handles. Until a recent conversation with my husband I felt there was nothing to celebrate because I hadn't done it perfectly and progress has taken longer than I planned. "I'm 32!! Why can't I be more disciplined". He challenged that. So I made myself dig up the wretched photos from last year beginning, end, and this year after I started keto and I actually surprised myself. I didn't go backwards. I've lost 20-25 pounds from the first photo. Gained muscle for sure , fit in more of my clothes and feel better. Are you craving Tacos? While Smithfield isn't a brand I generally frequent.... This was ..... I can't even tell you amazing. Cook low heat, covered on the stove for about 2 hours.... in a little oil. Stirring and flipping meat occasionally to carmelize. I mean.... HEAVEN.  It's already cut in pieces and everything. Turkey, reduced fat salami, eggs, tomatoes, peppers and avocado for a whopping 475 calories ( less than a venti Starbucks unicorn frappe that everyone seems to talking about ) 34g protein and 9 net carbs! On a side note WEIGH your food.
