When I set out to make this plate, I’d hoped the lettuce would be bigger so I could use them as taco shells. But that totally didn’t work out. This definitely turned into a make shift taco salad real quick. Also, who else is obsessed with @sietefoods tortilla chips? They don’t last long in my house because we just have no self control around them. So good!

I’m officially back in action! After a full week of being laptop less, I’ve never been so excited to get back to work! I’m traveling this week and I’m so glad I’ll be able to share with you guys again. What are some of your favorite places to go in Chicago? I’ll be there this weekend!
I’m not usually one for meal prep. I like to get creative throughout the week so I tend to just make as I go. But occasionally I’ll prep somethings ahead. Today, I’m making loads of veggie bases to throw together meals this week. I love building my meals around vegetables because I find it’s the easiest way for me to get loads of them in. It’s a beautiful day to be alive friends! And this breakfast has me even more excited this morning. I’ve been craving carbs a bit more than normal so I decided to listen to my body and switch up my normal smoothie bowl today.
