Found some beautiful chives, yellow and flowering, at @hmartusa yesterday. They are packed with magnesium which is great if you are deficient. Cooking up a batch to have over the next few days, if they make it that long. The smell is amazing and I could potentially eat it all today with some jasmine rice. I love Chinese chives by itself but I'm thinking it will probably go with scrambled egg in the morning or with some frozen gulf shrimp for lunch; I always keep a pound or two in my freezer now that I can eat without any symptoms! Anyone else have any favorite combinations with Chinese chives? .

|| When you live with a slew of stomach issues, meal time is work. I faugh that fact for a long time and hated this thinking. Why couldn't I just go out and enjoy a meal like everyone else? After being sick and tired of being sick and tired, I made a drastic change to my diet and try to make time for meal prep every week whether I want to or not. I do it because my future self will thank me. I do it because it means I won't be sick later on in the week and I will have energy to be present with my family. It's not just about convenience. This week I made two batches of soba noodles, one is a soba lo mein and the other is a ginger scallion noodle that I made mostly for my daughter's lunches, but I intend to partake in it as well! This lo Meir is from The Lowfodmap Cookbook by Diane Fastenow Benjamin and it's one that has quickly become a staple in my kitchen. The ginger scallion noodles are just that- ginger, scallion, soy sauce, and vinegar. Because we both love acidity, I also put thinly sliced cornichons! Seriously, pickles in noodles. Try it. I learned from my grandmother's Singapore noodles but I tend to it in many Asian noodles. For all those struggling with meal prep, it's hard, I know, but keep it up because your body will thank you in ten fold! Miso is such a great source for Vitamin B's, E, K, and Folic acid, so I was like heck yes. Guys, it was good! The only thing inwould@do differently is add more miso. I used @misomaster sweet white miso but you can also used red as well, and my bread of choice is @littlenorthernbakehouse gluten free millet and chia bread that I get from @sprouts. It's been a while since I've had any red meat and so naturally, the default recipe for us is grilled steak (grass fed) tacos, with cilantro and minced onion, avacados, limes, and a kale salad That's it. || I'm not the pumpkin obsessed one in this house, my son is. Two things he continually asks for ALL YEAR LONG: pumpkin cream cheese and pumpkin pancakes. So, for the first day of school tomorrow, we picked pumpkin pancakes and I made a huge batch for the freezer! Although I do have some great dairy and gluten free recipes, this is not one of those. || Crispy fish tacos with peach salsa + avacado cream from The Anti-Inflammation Cookbook by @amandahaascooks; paired it with sautéed okra with cumin and a kale, lime, and sunflower seed salad. First real meal since #hurricaneharvey. The stores in most areas around Houston now are pretty stocked. Was able to get groceries for the week to prep for one child going back to school (the other will start next week). As I was cooking and eating outside with my family, I was overwhelmed with gratefulness. So many are not able to have a normal meal right now. Nevertheless, for those who were not affected as badly, it is our job not only to assist in recovery but also get back to normal as quickly as possible. || Prepping for Hurricane Harvey has given me an appetite. Most days I run around frazzled and anxious; it's my default mode, so I have to put in an extreme amount of effort to have calm and mindful breaks. Something about being around so many other frazzled people, I find a little more clam in myself. My heart beats a little slower, my mind is more organized, I feel less like a my nerves are electrified. I go about the chaos in a hurry but in a very productive manner...It's a surreal feeling. Never do I feel as hungry as I do during times of urgency. Anyone else out there relate? This morning, starved putting away all the snacks, perishables, and water, I made this for myself and the hubs. Why have ever not put basil with scrambled eggs before? || When life gives you scraps, you make broth because....back to school, back to germ-y house! We do many things at home to ward off viruses. Other than washing hands, we have almost a constant stream of diffused theives oil, wiping down door knobs and switches daily, probiotics, change clothes as soon as we get home, and when there is a known outbreak, I whip out the Lysol and douse backpacks and shoes. 🤦🏻‍♀️This stems from some obsessive tendencies but my obsession has become more productive now actually. I used to douse the whole house in Lysol, so I'm much better now 😂(seriously though, I'm working on it). We get hit rarely with the bad stuff, and when we do, it's quick and not horrible. Another thing I tend to do is make broth and soups. Packed with all the nutrients you need to fight viruses, it's perfect for this time of year. One tip, broth from scratch can be expensive if you are using many vegetables and purchasing whole protein for it. I sometimes freeze my scraps for several months, onion skins, carrot tops, carrot peels, so on. Also, freeze your carcasses and innards of course. I also sauté garlic in the oil, then discard, add a ton of dill and put a huge dollop of @greenvalleyorganics yogurt on top. || A huge part of successful meals is meal planning. I personally love it, it's therapeutic so I make a point to carve out time dedicated to this. It's definitely a priority here. But for most, it can be overwhelming and for good reason! A good place to start if you want to make this change is to invest in a few good cookbooks, or recipe box, and find a special place for them. Have some pens and a notebook close by. Remember, doubling batches saves you time and money, and leave a day just for stews, soups, casseroles, or curries so you can easily use up your produce. Also, think of ways you can re-use dinner items for breakfast somehow (will definitely have posts on that soon). Take it slow too; if you aren't accustomed to cooking everyday, start with just 3 days a week (give or take) and allow yourself to fail sometimes! Tonight's curry is full of white sweet potatoes, carrots, zucchini (though I wish it was Thai eggplant), shrimp and a (pardon my French) shit load of Thai basil leaves. On a second note, I used to assume I had a shrimp allergy. After complete an #eliminationdiet and #lowfodmap diet, I discovered that I wasn't allergic to shrimp at all, grease is the culprit it looks like. The one from the Nourishing Meals cookbook by @nourishingmeals and @tommalterre has become one of my favorites because of the simplicity. Tonight we paired it with wild rice and sautéed cabbage with bacon. || The morning after a run to the Asian grocery store is a morning where this is breakfast. Growing up, this was another one of my comfort foods, dried pork, or Yok Sung. I only eat it on toast with butter and many times you will see it on the milk bread pastries at your Asian bakery. Normally I put it on top of milk bread toast, but since I over did itwith that yesterday and my gut is feeling sluggish, it's on @traderjoes gluten free bread and @greenvalleyorganics salted butter, alongside baby bananas. The pork itself, I'm not sure how healthy it is, I can't read the label! || My ultimate comfort food from growing up is chinese steamed fish; one of the benefits of living with a Chinese grandmother who cooked nearly almost every meal each night. I've been so intimidated to try on my own every though it is one of the most simple recipes out there....thanks to the microwave. Cleaning the bok choy was more labor intensive than the fish! Tonight, I paired a beautiful red fish from Viet Hoa with bok choy and garlic, and preserved duck eggs. Something else that I learned is that the duck eggs have about 10% of your daily iron! And about enough sodium to last you a lifetime, so go easy on that if you want to try! Time to sek fan guys!
