Chocolate Tiramisu. Let me start off by saying I have limited experience baking so tiramisu is great because it’s no bake 👍 Plus it tastes so so good. I’ve made it so many times (as you can see in my previous posts 😁😳) but never as a cake shape before. This is the first time too that I added semi-sweet chocolate to the mascarpone mix. The result was a rich and creamy chocolate tiramisu.
I found it was a bit too sweet for my palette though. So for the next time, I’ll use either dark or unsweetened chocolate and make only the centre layer with the chocolate mixture.
Pasta riscaldata. This is one of the few leftovers I look forward to eating more than when it’s freshly made. I promise you it’ll be the last time you’ll microwave your pasta. Follow the tips below and you’ll end up with a reheated pasta that’s as good if not better than freshly made. Plus it makes for a quick meal during the work week.

Here’s how I reheat mine. Heat up some olive oil (here I added about 3 tbsps) with a knob or two of butter in a non-stick skillet over medium-high heat. Add leftover pasta. Gently stir occasionally. Add some leftover tomato sauce and stir. You can even add a splash of heavy cream at this point as well. Toss in grated parmesan and mozzarella (In this picture I added about 3/4 of a cup of parmesan and about the same amount of mozzarella). Stir. Raise heat to high. At this point you want to stop stirring because you want the pasta to start caramelizing. Once I have a nice crispness on one side I stir or flip it and continue to do this until I have enough crispy pasta bits to my liking. I crisp it up quite a bit since we tend to fight over them here 😃
First attempt at making bomboloni. Motivated by @marmalicious__ I decided to try my hand at it since hers looked so good and they did noT disappoint. I filled mine with whipped cream and dipped them in a milk chocolate glaze. Easy to make but they definitely do take time. No doubt I’ll be making them again 😋
I remember the first time I saw mussels thinking, “Seriously ??” What finally convinced me to try one was that aroma of garlic white wine and the rest is history. I usually fry up naan or pita to soak up that delicious broth.
As I was posting this I realized it has the Halloween colours in it so let’s pretend I planned it that way 😉

These make for great leftovers for lunches with some grilled chicken.
Roasted portobello mushrooms filled tomatoes, spinach, Parmesan, topped with buttered garlic breadcrumbs.
Sweet and spicy citrus glazed salmon served with roasted cauliflower and basmati. Ready in 25 mins. Now if I could only manage to get out the door in the morning in the same amount of time as it took to make this 🤔
Today's Sunday Pasta: Roasted garlic and cherry tomatoes with tender braised baby artichokes. Served with hot pepper and parmesan. After roasting the cherry tomatoes and garlic in olive oil on a cookie sheet, toss the pasta right on the sheet pan. Great way to soak up all the flavours
Who knew purple cauliflower is higher in vitamin A than white ? Or that it's not genetically modified ? Not me. Inspired by my better half and @bakingcuisinetravel.fun cauliflower crust, I decided to make a crispy purple cauliflower crust pizza with cheddar, bacon, green onions and sour cream. Absolutely delicious !
The entire point of this post is the rice but unfortunately the picture does it absolutely no justice whatsoever. So you're going to have to take my word on this. Emeril Lagasse's portuguese rice recipe is 💥The only change I made was decreasing the amount of cilantro. It actually looks kind of dry in this post but it's anything but and it's the perfect accompaniment to roast chicken. A definite must try.
Fail. So I had some leftover cauliflower from last night's dinner and thought to mash it in with some potatoes, spread it over the ground meat I prepared for meatloaf and then roll it up like a jelly roll ! Kind of got all excited thinking about how great it would look and how compact it would be... aaand I got this instead 🙄
