Vegan Mac and Cheese 😍😍😍
🧀I combined @forksoverknives cheese sauce with @beyondmeat and gluten free penne. Topped with Ritz crackers (yes they're vegan) and baked at 400 for 10 minutes to crisp up. Drizzled some hot sauce on top 🤤
My friend Jahnai gave me the most amazing baked tofu recipe and I had to share it! Buy extra firm organic tofu and drain out water. Press down to really get the liquid out. Slice 1/4 inch pieces and dip in marinade:
🌿1 tbs. olive oil
🌿1 tbs. water
🌿3 tbs. tamari
🌿2 tbs. nutritional yeast
🌿1 tsp. garlic powder
🌿Place on a baking sheet lined with parchment paper and cook at 400 for 20 minutes each side.
🌿This is seriously so good! Comes out crispy on the outside and soft on the inside 🤤. I put it over my leftovers from last night.
🌿Drain and rinse a can of chickpeas and pat dry. Drizzle with olive oil, salt and pepper and roast at 400 degrees for 25 minutes. Toss with paprika and garlic powder. Eat as a snack or make a Buddha bowl! Tonight I added them to a bed of:

🥙Toast bread and assemble toppings, that easy! This is so refreshing and easy to throw together in the morning before work.
Tonight's dinner was roasted beets, broccoli, and tomatoes over turmeric rice. Topped with cabbage, scallions, cilantro, @lightlifefoods garden tempeh and @kitehillfoods cream cheese.
🌿Tempeh is made from soybeans and packed with 16 grams of protein, 8 grams of fiber and only 10 grams carbohydrates!! This brand is both organic and non GMO making it a safe alternative for meat 😊
Vegan Sour Cream:
🌿1 cup @kitehillfoods plain almond yogurt
🌿1/2 lime juiced
🌿1 clove garlic, minced
🌿1/2 tsp. Salt and cayenne pepper
🌿1/2 tsp. Hot sauce

🌿 Organic baby spinach topped with @healthworkschef turmeric brown rice, sautéed Brussels sprouts & mushrooms, beet slaw (recipe in previous post), @kitehillfoods chive cream cheese and @farmhouseculture sauerkraut.
🌿1 cup broccoli
🌿1/4 cup olive oil
🌿1/2 lemon juiced
🌿salt and pepper
🌿shred veggies with a grater and add to a big bowl. Top with dressing and serve as a side dish, on a salad or on a macro bowl. Simple yet delicious!
Smoothie bowl for breakfast on this hot day 🤤
🌿blend 1 cup frozen banana, 1 cup frozen strawberries, 1/4 cup almond milk and 1 scoop of @drinkorgain organic superfoods. Add in any extra toppings, we did banana, peanut butter, mixed nuts, shredded coconut and chia seeds.

🌮seared some @aldiusa salmon and ahi tuna in my @lodgecastiron with some @fourthandheart ghee, salt pepper and paprika. Heated up some @traderjoes corn tortillas and topped with red pepper, onion, salsa, lactose free sour cream, lettuce and cilantro. Also added a side of rice and beans with more peppers and lettuce because well, why not 😋
