Sorry to have been a little MIA lately but we've been working on an exciting project... downsizing to a little under 300 sq. ft and simplifying our life. This is an older pic but I'll be posting some new ones soon to show the progress!
Fail to prepare and prepare to fail. We had a lot of driving to do today so I packed us a clean lunch.
🌿Olive oil, red wine vinegar, nutritional yeast, garlic powder, oregano for dressing!
Meal Prep Monday! For the next 21 days Alek and I are doing an elimination diet. You remove all "trigger" foods that can cause a reaction and then reintroduce one at a time. This will help us to see what foods we may be intolerant to. Today's prep was:

His and Hers smoothie bowls 😍 I love Acai Bowls but man can they get expensive. Blueberries give you the same benefits and are half the price!
🌿Blend 1 cup frozen blueberries with 1 cup frozen bananas and 1/4 cup of almond milk.
🌿Add whatever toppings you want... that easy! We did banana, strawberries, blueberries, coconut, peanut butter, chia seeds and homemade granola ❤️
A little Monday Meal Prep for the week.
🌿 Roasted Tomato Basil Soup (recipe a few posts back)
🌿 @melissa_hanson Cheese Sauce to go over everything! 🤤
🌿Loaf of Bread (only 4 ingredients and yes I ate half before the picture, Alek helped 😳)
🌿Shredded Beets, Carrots, Cucumber, Radish and Broccoli with salt, pepper and oregano (add this to any meal as a side dish or throw in a big salad)
🌿Root Vegetable Sauerkraut (should be ready in about a week)
🌿Strawberry, Blueberry Ginger Kombucha (major probiotic and perfect way to start to your morning)
I've learned two things from this picture.

🌿I desperately need to invest in cuter bowls 😳
🌿But seriously this was the most perfect brunch... heirloom bruschetta, baba ganoush, fried zucchini dipped in roasted tomato soup and toasted bread rubbed with garlic 🤤
With the garden In full swing I made roasted tomato, basil soup 🌿
🍅Preheat oven to 425 and Roast 3 pounds of tomatoes (assorted varieties) with 6 cloves of garlic, olive oil, salt and pepper.
🍅Sauté 1/2 an onion until soft and add in 4 cups of vegetable broth.
🍅Add in roasted tomatoes, garlic and 1/2 cup of basil.
🍅Use an immersion blender to make smooth or transfer to a regular blender.
🍅Summer for 5 minutes and serve with some homemade bread 🤤
Finally made Bibimbap! Rice topped with:

🍛kochujang (spicy Korean sauce)
🍛Fermented foods like kimchi are so beneficial for your gut bacteria! This is going to become a new regular for dinner 😋
Vegan Mac and Cheese 😍😍😍
🧀I combined @forksoverknives cheese sauce with @beyondmeat and gluten free penne. Topped with Ritz crackers (yes they're vegan) and baked at 400 for 10 minutes to crisp up. Drizzled some hot sauce on top 🤤
My friend Jahnai gave me the most amazing baked tofu recipe and I had to share it! Buy extra firm organic tofu and drain out water. Press down to really get the liquid out. Slice 1/4 inch pieces and dip in marinade:
🌿1 tbs. olive oil
🌿1 tbs. water
🌿3 tbs. tamari
🌿2 tbs. nutritional yeast
🌿1 tsp. garlic powder
🌿Place on a baking sheet lined with parchment paper and cook at 400 for 20 minutes each side.
🌿This is seriously so good! Comes out crispy on the outside and soft on the inside 🤤. I put it over my leftovers from last night.
🌿Drain and rinse a can of chickpeas and pat dry. Drizzle with olive oil, salt and pepper and roast at 400 degrees for 25 minutes. Toss with paprika and garlic powder. Eat as a snack or make a Buddha bowl! Tonight I added them to a bed of:
