The brownies are super dense and packed with protein! They are gluten free, vegan, and sugar free.
1/4 cup oat flour (blended oats)
1.5 tsp baking powder
Sprinkle of salt
1/4 cup of cocao powder
1 cup nut butter (I used my homemade one from the other week)
1/2 a roasted sweet potato
1 tsp vanilla essence
Blend all the wet ingredients together, then mix in the dry.
Spread evenly in a pan and cook into oven on 180C for 20 minutes. They firm up as they cool.
This recipe is awesome, and the result is super chewy and moist. Great with bananas! This one is for the @bathscape blog as an idea for snacks to take on a long walk, so you can keep your energy up and not resort to sugary snacks! .

You can have a cold beer mid-afternoon and it's fine! It's also not too hot, you can listen to music, and the sweet potato and banana muffins can be in the oven while you work!

I'll admit I didn't follow a recipe and I didn't know how these would turn out, and I'll tell ya why. .
You know I said we had loads of beetroot? Ciaran turned it all into hummus - so mixed it all with beans, chickpeas, mustard, spices, turmeric and all sorts.
Now I was kinda done with that hummus cos we had SO MUCH of it. So I thought I'd try putting it in a cake, mustard and all.
I was hoping the chocolate would cover up the flavour, and it kinda does!!! So these are chocolate beetroot hummus brownies!
I more or less mixed hummus, cocoa powder, coconut oil, vanilla essence, a few bananas, and some soya milk. Then baked for 30mins (ish). I would have added dates or raisins for sweetness but we had none! So they're a little on the bitter dark chocolate end of the scale, but it works!
The topping is coconut oil, cacao, and tahini, plus pumpkin seeds,cranberries and coconut. .

#nofilter cos this pasta is so pink! It's tomato and spinach pasta with veggies (including beetroot obviously) and passata. Add a sprinkle of nutritional yeast and you're good to go! .
Being sugar free doesn't mean spending loads of time faffing around with food. I do love doing it but I'm a busy girl and sometimes ya gotta just throw something together. That's fine too! .
I've been eating a helluva lot of beetroots lately cos we were given a whole box of them by our friends who own a cafe and have gone on holiday. .
I'm starting to run out of ideas after grating it in everything, making 10 litres of hummus, and even baking beetroot chocolate brownies! .
