My husband accidentally bought walnuts instead of pecans for one of our favorite chicken salad recipes, so I found myself with a surplus of walnuts and no use for them! Fast forward months later to last night while we were watching The Crown (😍) and we both had a hankering for something sweet. So I decided to put those walnuts to good use! Today is a "clean out the fridge" kind of day! Made a big salad with leftover roasted rainbow carrots, chopped romaine and spinach, turkey, cherry tomatoes, and some avocado 😋🥕🍅🥑 So easy, fresh, and delicious!

This low FODMAP pesto is a delicious recipe for not only those suffering from IBS! When the low FODMAP diet was recommended to me by my physician, I was disappointed by all of the Italian meals I would be missing out on. This inspired me to come up with a pesto recipe that I could still enjoy on the diet! This pesto is super easy and so tasty on crackers, zucchini noodles, or gluten-free pasta. I needed a quick and simple dessert the other night when my parents were coming over for dinner, so I melted some @enjoylifefoods semi-sweet chocolate chips on the stove, dipped in some strawberries, and topped them with a little pink himalayan salt! These strawberries were a serious crowd pleaser and yet so, so easy 😉 Enjoy Life chips are dairy, nut, and soy free so you can enjoy dessert worry-free 😋🍓🍫
