I recently received @bakeinaminute and I'm SO excited to try a bunch of recipes, and to create my own.
The first thing I used it for was a classic toasted bun for my "breaded" veal parm sandwich -- delish.
And SO easy to mix!
I can already tell this is gonna be a staple around here...

Here's my dinner this eve: pork schnitzel (pounded pork loin covered with mayo, then crushed pork rinds and almond flour, seasoning), side of mung bean pasta with creamy pesto and mushroom sauce. I put some on my pork too.
This. Was. Great.
And for real: 2 pounded out peices of loin cost me 1.70. 🎉🏆
I recently recreated a photo that was taken when I hit my heaviest after my back injury. 2 months after this i started my fitness journey, and ended up getting injured AGAIN and gained alot of my efforts back. But this was the heaviest.
Sidenote: those pants were TIGHT and really the only thing that fit me at that time. Now, I can wiggle out of them when they're still clasped!!

I did a 24hr fast after I ate my feelings last night. No, not as penance - I don't punish myself for food choices. But because I didn't feel well, or hungry until I got home from work.
I made a CHOICE, knowing I wouldn't feel well today, but my carbage would comfort me when I needed it. And life moves on.
Mung bean pasta topped with creamy pesto with roasted mushrooms and zucchini.
I was hungry! And needed some food for a long day of finishing a commissioned piece with very sore hands (from my forging weekend).
2 teeny avos with salt, pepper, garlic powder mashed and spread into a toasty flat out wrap. Topped with fried ham, 2 eggs and some parmesean.
Green eggs and ham? Pretty close!
And one of my favourite meals EVER 🎉
Went forging in the country this weekend and pretty much lived off meat sticks, cheese, diet cola and my stellar blacksmithing abilities! 😂
Back on schedule this week, but thought I'd stop in tonight to say hi ❤
I'm VERY excited about this.
I don't use a lot of sweetener, I just like a wee bit in my tea.
I've tried stevia, a few erythritols, swerve and other randoms - all have that weird aftertaste or cooling flavour. Not the worst but not great.
Monk fruit is sweet but delicate, no sugar alcohols, no weird flavour, prebiotic and extra fibre! It's delicious, and expensive, but so very worth it 💚💚💚
Tried #flatoutbread for the first time! Nearly got Joseph's lavash like I've seen all over IG, but I didn't jive with the ingredients they use...
This was super good! Also got a different bread to try, and mini pizza crusts!

So I roasted a whole chicken but was so excited I took this picture only apparently lol
Not shown: the gravy I made from drippings and konjac flour (thickener!), buffalo sauce, all the skin I ate off the rest of the bird, and the sugar-free chocolate square I had after 😇
On the side we have a small amount of brocc/cauli covered in a delightful cheesey sauce. 💥BOOM💥

So for my first meal, I didn't know if I wanted breakfast or lunch - so I made both 💁
Breakie pizza (#yucatanguacamole , fried ham, egg, parm)
And trad pizza (spiced passata, cremini mushroom, mozz, pepperoni)
Both on #mamalupe low carb tortillas.
Life lesson: if you can't decide, have both. (this applies to literally anything)
I'm not proud of this mcdouble on top of a mighty angus burger, but it's BEEN A WEEK.
I added a small amount of grated cheese to my #90secbread which was pretty decent, thankfully.
I'm stuffed. I'm tired. I'm gross. But still keto 💁😴
It's been a busy, exhausting week.
No share-worthy news except I tried #chipotle for the first time! Haha
I didn't bring anything with me to work, so I ordered a burrito bowl, no rice/beans, extra chicken, cheese, romaine.
This shows the 1/4 I scraped out and mixed in the lid! This thing was like 6 damn pounds!
I ate it for lunch and dinner, and it was really good.
10/10 would again. 🎉
