Here's the end result of my late night "baking". Everyone at work really liked this holiday spiced cheesecake.
Looks like I've got another Instant Pot winner 😊 I don't think it needs to be tweaked but gotta make another for pics 😉

I was feeling like the rose motif this weekend so it's reflected on my planner layout this week.
As indicated by my to do dots, I plan to finally get a bunch of stuff done this week.
Then coupled with my usual MCT coffee in my @ketokollection1 mug, I'm ready for anything!

I was inspired seeing these amazing short ribs at a local butcher shop yesterday.
SO! Dinner Tonight is beef short rib on top of mashed cauliflower both made in the Instant Pot.
The beef short rib recipe is on page 36 under BBQ Short Rib in the Ketogenic Pressure Cooker cookbook. This is one where you can cook it for 5 minutes and it's good. Though, cook it for 30-40 minutes and let it naturally release pressure. It was so succulent and tender. I think I had a mouthgasm!
I couldn't finish it all. Looks like I have yummy leftovers for tomorrow!
Now off to whip something up! I'm in a cooking mood today!
Slow Roasted Bacon
So with this talk of cooking bacon, I wanted to try something a little different.
I've cooked pork belly many a time and it occurred to me that bacon is smoked pork belly, sliced thin. Well duh! I can be slow at times! 😂
Whelp, so I thought well let's try it! It's a thick cut bacon, placed on a rack, on a cookie sheet in a 300F oven for 3 hours.
Now this was rough! That wonderful bacon smell wafting for 3 hours! No need for Scentsy today! 😂
But when it was done. Get back because oh my! Wonderfully succulent and incredibly tasty. The fat has the same texture as pork belly slow roasted. It's hard to explain but if you've had pork belly before...you know what I mean! 😍
Would I do it again? Absolutely!!! Though I wouldn't do it all the time because it's so much richer that I could only have a couple of pieces and I was full! This cooking method certainly has a time and place.

I've cooked it in a cold cast iron, in a cold skillet with a couple of tablespoons of of water, baked it on a cookie sheet, on a rack on a cookie sheet. I haven't cooked it in a microwave in ages but I've done that too.

I had an unexpected errand this morning. so I thought I'd pop by Starbucks before I headed home. I tried to bring up my usual drink under my favourites but it wasn't coming up on my app.
I wasn't thinking I was trying to look for a photo that I had of my last order. I did delete the stevia which made it bitter but I forgot about the "extra" cream. Oiy!
I'll add MCT and collagen to it when I get home. It will be really yummy but just a leettle high on the calories!
Just a small snack. I'll be going to float therapy in a few hours.
I've found that if I'm fasting while floating isn't good for me. I get a little sea sick /nauseous from the slight movement. But I don't want a big meal either.
This small cheese and crackers (by @evescrackers ) plate with the last of the prosciutto should hopefully do the trick!
I'm off to do some errands in a few then do a gratitude float until the early evening. I'll be sleeping like a baby tonight 😴
I've been discovering a few new cool places to dine recently through Google Maps.
Hubby and I were in Surrey a couple nights ago and came across Texx Big Burgers @texxbigburger It's a small place. Close to 108th Ave and 148th St.
Burgers are made fresh to order so there's a little wait but worth it.
This is a TEXX BIG burger. I had been fasting for about 19-20 hrs and that would be it for the day for me.
In this lettuce wrapped TEXX BIG Burger is:
3 x 5oz patties
Then you could choose your toppings.
Mine were mayo, mustard, hot sauce, lettuce, tomatoes, grilled onions, lite jalapenos, grilled mushrooms.
Of course with all this goodness a ton of napkins were needed. To wash it off I had a diet cola.
I did try a couple of fries from hubby's and they were excellent too.
They remind me of Five Guys but Texx Big Burger takes it a little bit further. I do wish the bacon be a little more crisp but I'll ask for that next time.
We'll definitely be back!

What's in it?
Fresh brewed coffee
1oz SF Pumpkin Spice syrup
1oz heavy cream
1/4 tsp pumpkin pie spices

Placed all in nutribullet for a couple of minutes.
I like it a little more spicier so I'd add more spices but it is just wonderful. ❤

Just finished physio. Had needles, cupping and ultrasound tossed at my knee. Hopefully I can hit the gym full bore soon.
Now I'm at my motivational Wednesday breakfast.
Today we're trying out Jimmy J's then hit the treadmill at the rec centre.

A few people asked what do I eat after breaking a fast. Sooooo, this is what breaking my 21 hour fast looks like.
1) I brought home a couple of pieces of venison pepperoni that a friend from work brought in. It had a nice amount of heat and spice.
2) I then had a bowl of stoop, that I made a few nights ago, while I was waiting for supper to cook.
3) Dinner was a 200g salmon fillet topped with mayo, parmesan and baked. It sits overtop a fresh made coleslaw.
4) Then last is a Ketosys Vanilla Chai shake with 2tbs cream to top off some fat for the evening. (to see the nutrition panel scroll ➡) Calories 1483, 91g protein, 22g Carbs, 11g fiber, 117g fat.
I'm happy with those macros for today.
Tomorrow is another day. I won't be doing an extended fast tomorrow but I probably will Thursday. 😉
