Pomegranate Pancake Pile has a nice pop to it, dontcha think? Extra fluffy pancakes from Isa Does It today & a quick pomegranate jelly. Shout out to @volupveva for helping me realize I don't have to stick to one pan, I fired up all three of my cast iron pans today and got a double batch of pancakes done in a mere Up First plus a PBS NewsHour Weekend because what is time but a reflection of my podcast queue. #veganornot

Vegan Fried RiceπŸ‘ŒI used the method from @seriouseats for some seriously perfect, chewy fried rice yesterday. One of my favorite just-for-me ten minute meals to use up some leftovers. Threw some seitan shredded chickun, scrambled tofu, peas, corn, & shredded carrots into this version.πŸ’ƒ #veganornot

Still on my quest for the ultimate "heavens open & angels sing" style vegan meatloaf. In the meantime, this'll do nicely.πŸ‘Œ Eight ounces of crumbled beef-style seitan (great way to use up any rubbery, so-so seitanβ€”just toss it in your food processor,) third of a cup mashed black beans, a few tablespoons of oats, bit of soy sauce, your favorite herbs, pepper, three tablespoons of water and about 2 tablespoons of vital wheat gluten. Combine, bake at 400F for twenty minutes, add your sauce of choice, bake for another forty minutes or so, or until it gets nice and crispy. πŸ‘©β€πŸ³ #veganornot

These would be great to make a big batch of for the week. I set these aside from my weekly Instant Pot potato prep you can check out in my featured stories but someone even mentioned (I'm so sorry I've forgotten who, tag yourself!) that their Kroger sells twice baked potato shells in the frozen department to save time! πŸ‘Œ #veganornot

Super Seitan Bourguignonne with Golden Yukon mash. This was eeeasy but tasted like much more work than it wasβ€”throw about half a shredded blackbeet beef (or soy curls, even) into a 6qt Dutch oven with a small red onion, a few carrots, some celery, garlic, your lotsa herbs, bit of cornstarch, and about two cups of red wine (thanks, Barnivore!) saute for about 3 minutes, add the lid, & place in a cold oven set to 350 for about an hour and a half. I'd normally add some veggie stock too but I need to make some tonight. πŸ€·β€β™€οΈ Steam potatoes in the instant pot, mash, add unsweetened soymilk, earth balance, salt, pepper, turn the oven off, & throw in some rolls to warm up so the house smells like you made those too. πŸ™Œ #veganornot

Today is grocery and prep day (I'm making @avocadosandales ' #blackbeet beef right now πŸ™ŒπŸ™Œ just got the beans done and the mushrooms roasted) so plz enjoy these vegan corn dogs from dinner last night ✨This is only the second time I've made corn dogs, so it's only the second time Virgil has had them, and he is alllll about that "pancake hot dog corn dog" life. 
Just some @lightlifefoods smartdogs on some sticks from Amazon in a batter I had my Google Home find for me because I was in a hurry & I veganized on the fly. My husband gets home from work after dinner and still liked them even reheated so that's promising. I think I have a plan for a better one, so I'll let you know if it works. Served with applesauce, soygurt, & cucumber because they were easy to pull out of the fridge πŸ˜‚πŸ˜‚ What are y'all up to this weekend? Anything fun? πŸ’ƒ #veganornot

It's a (vegan, ofc) pizza breakfast sandwich! πŸ™ŒπŸ• sourdough english muffin with a tofu fried egg, melted mozzarella cutting board shreds, sundried tomatoes, baby bellas, & a warm side of marinara for dipping. I knock out about a Costco container of mushrooms a week, but my family can't stand them. I'm pretty picky about them too, so I get it, but what about y'all? πŸ‘πŸ‘Ž

Vegan Old-Fashioned Sour Cream Doughnuts have been on my mind for a lonnng time, but it just seemed so overwhelming, and I couldn't find a good recipe. Often vegan donut recipes are baked, and while I'm sure they're tasty, they're just cute little bundt cakes to me. Tasty, but just not going to scratch the old-fashioned doughnut itch, ya know? Last night though I realized I had some leftover VeganEgg and decided to just go for it. It worked perfectly! Link to the vegan version in my bio if you'd live to give it a go. Orange Chickeny Soy Curls for our post-Mass lunch today πŸ₯‚ I wanted to have a hot lunch ready and we don't usually care for crockpot meals texture-wise, so I got the soy curls ready to go yesterday, put the rice on a delay timer on my Instant Pot before we headed out the door, and then I just had to mix up the sauce and fry up the soy curls today. We were eating within twenty minutes of being home! I used the Orange Tofu from Chloe's Kitchen, but with 2 cups of soy curls instead (link in bio for those!) ✨ #veganornot

Crepes were a perfect compromise though, and he loooved helping me dump it all in the blender after I measured everything out. Topped with powdered sugar, chocolate sauce, & bananas, because . . . wait, does that need a because? We used the vegan crepe recipe from The Stingy Vegan.✨ #veganornot
