I propose you a Rösti "mess" with vegan cheese and porcini mushrooms.
Basically it is an idea when you don't have much in your fridge and with some potatoes, vegan cheese and mushrooms in can create a very attractive and delicious dish.
There is layer of porcini and melted cheese within the roasted potatoes.🥔🧀🍄

Today I prepared a delicious vegan semi-frozen dessert.🍰 I prepared this semi frozen dessert with a vegan "mascarpone" and a pistachio cream with a topping of raspberry.
I'm not a huge fine of these frozen dessert but are perfect for a hot summer day ☀️and above all you can make them vegan...as basically everything.

Who likes gnocchi and ricotta? 😊
Vegan ricotta with spinach cooked in a pan with vegan butter and parmigiano.
Gnocchi with ricotta and spinach.
You can find the recipe of the ricotta in one of my old posts. By the way is: 1lt of soy milk, boil it and pour 30ml of apple vinegar. Let it curdle and pour the compound in a cheese bowl and let it rest for 8hrs in the fridge.
Hope you had a fantastic weekend!! I am working on a lot of projects lately and I am exited for what it's upcoming.
I have a little less time to dedicate to new creation but these burgers are an example of how you can create delicious dishes with very few ingredients.
The ingredients are:
•Oats and barley •porcini mushrooms •potatoes •millet flour •soy
You have to cook the cereals and flavour them with the porcini mushrooms (obviously in the pan goes also onions, salt, parsley)
Meanwhile cook the potatoes. Put everything in the mixer and barely mix.
The compound has to be compact.
Add 3 tablespoon of soy and 3 tablespoon of millet flour, 2 tablespoon evo oil and salt as preferred. Mix with your hands and prepare the burgers in a pan or the oven as you prefer.

This is the Vegan Béchamel recipe:
1lt of soy milk (without sugar)
100 gr of bio flour
50 gr of vegan butter
1 teaspoon of nutmeg
Salt to taste
Put all the ingredients in a small pan on a stove. Keep whipping till the béchamel becomes thick and creamy.

•Cinnamon pastry cookies filled with jam and raisins, Chocolate chips and jams and "nocciolata" di Asiago vegan.

You don't have to give up delicious food when you turn vegan. Actually it will be more delicious and more light for your stomach...so you will enjoy it more 😊

This week I went up to the mountains and pick some delicious mushrooms🍄 More specifically Porcini mushrooms. They are absolutely amazing and super good to eat 😋
A very characteristic dish is "tagliatelle with Porcini mushrooms" you should give it a try 😉👌🏼🍄

Seitan is not the best food that we have but if you cook it properly, it can be absolutely wonderful. 👍🏼
This is...soy milk strips of Seitan and a potato pie (purée).
The strips of Seitan are really easy to prepare.
Pass the seitan strips into the flour and put them in a frying pan with vegan butter.
When they are browning, pour a little bit of white wine. Shortly after when the wine has evaporated, pour a glass of soy milk and let the sauce grow well. Salt as much as you prefer.

Hope you all had a great weekend. Today I want to focus not to the main course, which in this case are vegan sausages, but on the sides. I think many vegans don't know what to eat as a side of their main dish.
Today I give you 3 ideas:
1) potatoes sauté
2) trifoliated mushrooms (porcini)
3) baked peppers 🥔🍄🌶
3 very simple ideas but very tasty and easy to prepare😉

This pasta is a typical Italian pasta named "orecchiette" that means little ears👂🏼🇮🇹.
This pasta and the sauce are called "orecchiette alla pugliese" vegan versione. "Pugliese" means that are from Puglia region.. where food is absolutely amazing.
The sauce is made of:
Garlic, cherries tomatoes, rocket salad (rucola) and instead of the salt ricotta (which is the dairy cheese) I created my own vegan ricotta cheese homemade.
•Vegan ricotta recipe:
270 g of shelled lupins
3 tablespoons of dried semi-dried cherry tomatoes
3 tablespoons of flake yeast
1/2 teaspoon of chili pepper
60 g of deodorized coconut oil
3 tablespoons of water
Salt to taste
Pour all the ingredients into a powerful mixer and get a fine and homogeneous mixture.
Pour the mixture onto baking paper and roll it over and close it on the sides.
Put it in a freezer for 30 minutes
And 2 hours in the fridge.
Great on pizza, pasta and sandwiches.

Sorry if I didn't post for few days. I just took few days off 😊
But here we go again with a delicious vegan cheesecake ✌🏼
This cheesecake looks a little bit different from the original one because in my recipe I used raspberries and raw cane sugar, this is way it looks more "brown". •recipe•
200gr digestive biscuits
8 tablespoons of peanut butter
540gr of Natural Tofu
180gr cane sugar
400gr raspberries cream/topping (homemade)
1 and 1/2 teaspoon of cinnamon
1/2 teaspoon of ginger
2 tablespoons of potato starch
Mix the biscuit with the peanut butter and extend the compound in a cake pan e leave it in the fridge while you are preparing the rest.
Put in the mixer all the other ingredients except the potato starch.
Mix till you get an homogenous compound, right after put the potato starch too and amalgamate the compound.
Pour the compound in the cake pen left in the fridge.
Bake at 180 degrees for 50min. Let it cool down in the fridge for 3 hrs.
Serve the cake with creams and jams at your preferences.

I think this dish idea, it is a real restaurant dish. It would have a great success in every type of restaurant.
So lets have a close look to a delicious black Venus rice cooked with Tropea onions served on tempura eggplant and all garnished with caramelized Tropea onions. 😉
Vegan food is the best 💪🏼
Seitan "meatballs" with white wine, on a bed of tomato carpaccio 🍅.
1 clove of garlic
1 small leek
150g of seitan
3 tablespoons of soy
3 slices of wholemeal bread
2 tablespoons of oil
3 tablespoons of flour millet
Salt to taste.
50g of vegan butter
1/2 glass of wine.
Put a pan on stove with two tablespoons of evo oil.
Chop the leek and garlic and start frying it in the pan.
Cut zucchini and potato into slices and fry them in the pan.
Cook until cooked.
Put in the mixer the Seitan and combine the mixture of crushed vegetables and pour into a bowl. Chop the bread and join it with the compound.
Combine the flour and soy and two tablespoons of oil, mix all with a fork until a homogeneous mixture is obtained.
Taste it if it's good for salt.
Form some "meatballs" and cook them in the flour.
In a large frying pan, melt the vegan butter and combine the meatballs, salt them and roll them gently together till they are cooked (you can see this when there are a little crispy outside. After this pour the wine and cook 2/3 minutes more.
Another idea for a vegan pasta sauce.
These are Linguine (the type of pasta) with garlic, oil and chili pepper all cooked with crumpled tofu and breadcrumbs.
